Located in the untamed paradise of West Sumba, our client is a newly open five-star luxury hotel and villa. It is the perfect hub from which to explore the island, with its pristine beach and mind-blowing landscapes of natural lagoons, salt-water lakes, and traditional villages. The resort brings culinary excellence, contemporary Indonesian art, and modernist buildings together with traditionally styled pavilions, Sumbanese antiques, and crafts made locally with age-old techniques. The resort's core values of sustainability, culture, and community are reflected in every aspect of its design, which comprises 47 well-appointed rooms, 20 spacious villas, 3 restaurants, a spa, a gym, and a sprawling three-hectare organic farm.

  • Prepare all dishes following recipes and yield guides, according to standards and assign production and preparation work for all staff to complete, and review priorities.
  • Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations that compromise the department's standards and delegate these tasks.
  • Assisting in leading kitchen operations for the property.
  • Assist executive sous chef & executive chef with menu creation.
  • Assisting in the planning and development of event menus and recipes
  • Supervising, training and developing staff and ensuring consistency in work performance.
  • Ensure quality control and presentation of the food.
  • Ensuring proper handling and storage of all food items in accordance with the Company standards and sanitation regulations.
  • Takes full responsibility for portion control, usage, and wastage according to recipe standards


  • 2+ years of demonstrated experience in a similar position.
  • Indonesian applicants only.
  • Knowledgeable and well-versed in Asian, specifically Indonesian cuisine.
  • The ability to produce excellent high-quality food.
  • Experience in a luxury five-star property.
  • Experience in fine dining restaurants is highly advantageous.
  • Has strong leadership skills with an acute sense of good judgment and swift performance improvement.
  • Can thrive in a high-pressure environment and has a strong operational strategy that is timely.
  • Has in-depth knowledge of food safety principles and best practices, HACCP certification is desirable.
  • Has a deep understanding of the profit & loss goals, is proficient in performing regular menu engineering, and maintains an up-to-date market list.
  • Experience working in a remote location is a plus!
