Kitchen & Production
• Lead and supervise daily production of Greek yogurt and set yogurt, from pasteurization through straining, mixing, and packing
• Operate and monitor critical production equipment (pasteurizer, homogenizer, fermentation tanks, chiller) according to SOP
• Enforce pasteurization standards (90°C / 2-hour hold) and monitor fermentation consistency across all batches
• Assign daily production tasks to production team members across shifts (Shift A/B/C)
• Ensure all batch records, log forms, and quality checks are completed accurately and on time
• Identify and escalate product quality issues or equipment abnormalities promptly
• Coordinate with MD on production schedule adjustments, capacity planning, and new product trials
• Uphold and maintain all kitchen SOPs including sanitation protocol (H₂O₂ 3%), hygiene standards, and GMP compliance
Warehouse & Logistics
• Manage cold storage and chiller organization to maintain product integrity and FIFO rotation
• Oversee daily inbound (raw materials) and outbound (finished goods) — verifying quantities, batch codes, and condition
• Generate and track batch codes per Heirloom's coding system (format: DDMMYY-[Type]-NN) for every production batch
• Coordinate with delivery drivers on dispatch schedules and cold chain compliance
• Maintain accurate inventory logs for raw materials, packaging, and finished goods
• Flag stock shortages, near-expiry items, or storage issues to MD with sufficient lead time
• Ensure warehouse area cleanliness, pest control compliance, and regulatory readiness
Team Leadership
• Directly supervise 7–9 production team members across three shifts
• Conduct daily briefings and end-of-shift handovers to ensure continuity
• Support onboarding and hands-on training of new kitchen staff
• Escalate HR issues (attendance, performance, safety violations) to MD
• Model a culture of discipline, cleanliness, and pride in craft
