Job Title: Kitchen Chef[Full-time]

Reports To: Hospital Administration / Nutritionist
Job Summary:
The Kitchen Chef is responsible for planning, preparing, and supervising the production of nutritious and well-balanced meals for patients, staff, and visitors in a 100-bed hospital. The role ensures compliance with dietary requirements, hygiene standards, and budgetary constraints while maintaining high food quality and safety. We are looking for a motivated Kitchen Chef who is assisting, guiding, and supervising the resident Kitchen Chef in this position to develop the required skills for this role.

Key Responsibilities:
Food Preparation & Cooking:
- Plan and prepare daily meals according to hospital dietary guidelines and individual patient needs, especially those related to infectious diseases, immunity support, and recovery nutrition
- Ensure meals are prepared in accordance with nutritional requirements, food allergies, and dietary restrictions (e.g., diabetic, low-sodium, vegetarian, vegan, halal, etc.).
- Ensure compliance with halal food preparation standards in accordance with local regulations.
- Supervise and coordinate kitchen staff in meal preparation, cooking, and presentation.
- Maintain consistency in food quality, portion control, and taste.
Kitchen Management:
- Oversee food stock levels, ordering supplies, and ensuring proper storage, stock rotation and inventory control to prevent waste while ensuring availability of essential ingredients
- Develop and update meal plans in collaboration with dietitians and nutritionists.
- Manage kitchen staff, including scheduling, training, and performance evaluations.
- Ensure all kitchen equipment is maintained and used safely.
- Work within the constraints of Jakarta's supply chain logistics and availability of ingredients.
Health & Safety Compliance:
- Enforce food safety and hygiene regulations according to local health standards and HACCP (Hazard Analysis and Critical Control Points) principles.
- Ensure proper cleaning and sanitation of kitchen facilities and equipment.
- Monitor waste management and sustainability practices in the kitchen.
- Comply with BPOM (Indonesian Food and Drug Authority) and Ministry of Health regulations regarding food safety.
Budget & Cost Control:
- Monitor food costs and control waste to maintain cost-effective meal production.
- Work within a budget while ensuring high-quality meal preparation.
- Source ingredients from approved suppliers while considering import restrictions and local availability.

Qualifications & Experience:
- Minimum Diploma or degree in Culinary Arts, Food Services, or related field.
- Minimum 3-5 years of experience as a chef, preferably in a hospital or healthcare facility.
- Strong knowledge of dietary needs for various health conditions.
- Certification in food safety and hygiene is a plus.
- Experience in managing a team and coordinating kitchen operations.
- Reference letters from previous jobs are required.
- Candidates must be proficient in Bahasa Indonesia. English proficiency is considered an advantage.
