Job Description

LYD Bali Group is looking for a passionate and innovative Head Fermentation & Probiotic Development Specialist to lead the development of our next-generation beverage program across our hospitality concepts.

This is a unique opportunity to shape the future of sustainable, functional, and craft beverage experiences in one of Bali's most exciting hospitality groups.

Job Purpose

We are looking for an innovative and highly skilled Head Fermentation & Probiotic Development Specialist to lead our house-made fermentation program across both beverages and culinary products. Your objective is to reduce reliance on commercial sodas, synthetic syrups, and externally sourced fermented products by creating a rotating, hyper-localized portfolio of probiotic beverages, fermented foods, botanical extracts, vinegars, and preservation projects.

Key Responsibilities

Beverage Innovation

● Formulate recipes for house kombuchas, water kefirs, ginger beers, tepache, tea wines, botanical sodas, shrubs, and custom lacto-fermented syrups using seasonal Balinese fruits, herbs, spices, and botanicals.

Food Fermentation & Preservation

● Develop and maintain a program of fermented and preserved food products, including kimchi, sauerkraut, lacto-fermented vegetables, pickles, preserved fruits, fruit vinegars, drinking vinegars, hot sauces, chutneys, misos, and seasonal ferments.

Fermentation Management

● Monitor fermentation variables such as temperature, pH, sugar levels, carbonation, alcohol development, and microbial stability.

Quality & Safety Control

● Implement strict sanitization and food safety protocols.

● Maintain detailed production records, SOPs, HACCP compliance, and batch tracking systems.

Inventory & Sourcing

● Establish relationships with local Balinese farmers, producers, and suppliers to source fresh, organic, and seasonal ingredients.Training & Integration

● Train bartenders, chefs, and service staff on fermentation techniques, product handling, storage requirements, flavor profiles, and guest communication.

Job Requirements

Experience

● Minimum 2 years of professional experience in fermentation, craft brewing, beverage development, food preservation, or a related culinary field.

Technical Skills

● Expert knowledge of aerobic and anaerobic fermentation processes.

● Strong understanding of sugar-to-alcohol conversion, carbonation management, pH control, microbial stability, and culture propagation.

● Familiarity with draft systems, kegging, bottling, and small-scale production environments.

Language

● Professional English fluency with the ability to communicate complex fermentation

concepts.
