Job Description

Tavolo Group is a Bali Based Hospitality group specializing in concept inspired venue and brand, is seeking for an innovative and dedicated individual to join the team. We seeking the candidate with the capability to lead our Omakase Restaurant as Head Chef.

About the Role: As our Head Chef, you will be the creative force behind our menu. You will be responsible for curating exceptional dining experiencesOmakase while mentoring our kitchen team to achieve the highest standards of taste and presentation.

Key Responsibilities:

  1. Menu Development: Curate and innovate seasonal menus that balance traditional Japanese techniques with modern trends.
  2. Culinary Excellence: Maintain strict quality control over taste, temperature, and visual presentation.
  3. Cost Control: Manage food costs (COGS), inventory, and supplier relations to ensure profitability without compromising quality.
  4. Team Leadership: Mentor and train the kitchen brigade in specialized skills (knife handling, sushi preparation, seafood aging) and foster a disciplined, high-performance culture.
  5. Hygiene & Safety: Ensure full compliance with HACCP standards and food safety regulations.

Requirements:

  1. 58 years of culinary experience specializing in Japanese cuisine.
  2. Minimum 3 years of experience in a leadership role (Head Chef or Executive Sous Chef).
  3. Expert-level knowledge of Japanese knife skills, seafood handling, and ingredient sourcing.
  4. Strong leadership capabilities with a keen eye for detail.
  5. Fluency in English (proficiency in Japanese is a significant advantage).
