Role Overview

The Executive Chef holds full ownership of the culinary vision and execution of Mr. Gusti, the all-day on-premise restaurant of Heritage Boutique Hotel and its surrounding villas, serving breakfast, lunch, and dinner. Mr. Gusti operates as a destination restaurant in its own right; serving both hotel guests and attracting a local and international audience. The role combines creative authority with rigorous operational leadership, translating Indonesian culinary heritage and Western cuisine into refined, contemporary dining experiences across all dayparts.

Working in close partnership with the F&B Manager, the Executive Chef defines menus that unite storytelling, technical excellence, consistency, and commercial discipline. Beyond daily kitchen operations, the role actively shapes the culinary identity of Heritage Boutique Hotel and Mr. Gusti, setting standards through ingredient selection, presentation, service rituals, and the overall guest journey.

This is a hands-on leadership position for a driven chef who sets the tone, builds high-performance kitchen teams, and delivers uncompromising quality across restaurant service and in-villa dining, while maintaining structure, efficiency, and long-term scalability.

Key Responsibilities

  • Own and lead the complete culinary direction and daily kitchen operations of Mr. Gusti and supporting outlets, including menu creation, execution, presentation, and hygiene standards.
  • Design menus that reinterpret Indonesian culinary heritage and Western cuisine through refined, contemporary techniques and clear storytelling.
  • Set and safeguard uncompromising standards for flavor, consistency, craftsmanship, and presentation across all dayparts.
  • Build, train, and inspire a high-performing kitchen brigade, fostering a culture of discipline, creativity, accountability, and pride.
  • Work in close partnership with the F&B Manager on menu engineering, pricing, food cost control, supplier selection, and procurement strategy.
  • Maintain full compliance with hygiene, sanitation, and HACCP standards, leading by example in structure and cleanliness.
  • Develop strong relationships with local farmers, fishermen, and artisans to source seasonal, sustainable, high-quality ingredients.
  • Lead tastings, special events, and culinary collaborations that strengthen the positioning and reputation of Mr. Gusti and Heritage Boutique Hotel.

Requirements

  • Proven experience as Head Chef or Executive Sous Chef in a luxury hotel or high-quality fine dining restaurant; ready to fully own a culinary platform.
  • Strong technical mastery of Indonesian cuisine combined with modern Western and international fine dining techniques.
  • Natural leadership presence with the ability to build, coach, and elevate multicultural kitchen teams.
  • Clear creative vision paired with commercial awareness and operational discipline.
  • Deep curiosity for global culinary movements, sustainability, ingredient provenance, and evolving kitchen technology.
  • Fluent in English and Bahasa Indonesia.
  • A genuine passion for culinary storytelling and creating culturally authentic, memorable guest experiences.
  • Demonstrated ability to take full responsibility for a kitchen's performance, reputation, and long-term development.
