Job Description

Adecco Group is currently supporting one of our F&B Retail Clientin their search for Executive Chef for Japanese Cuisine. We are accepting Expatriate candidates that has been working in Indonesia and seasoned local talents.

We are looking for a highly skilled and innovative culinary executive to lead research, development, and menu strategy across our Japanese cuisine portfolio. The successful candidate will blend culinary mastery with brand sensibility, driving new product development while upholding the highest standards of operational execution across all concepts. A deep understanding of the Indonesian market and consumer palate is essential, with the ability to thoughtfully bridge authentic Japanese culinary traditions with local taste preferences.

Key Responsibilities

  • Conceptualize and develop Japanese culinary offerings that reflect each brand's unique identity while being intentionally adapted to resonate with Indonesian consumer tastes, striking a balance between authenticity and local relevance.
  • Lead new product development with a fusion-forward mindset, creating dishes that honor the integrity of Japanese cuisine while incorporating flavor profiles, ingredients, and preferences familiar to the Indonesian market.
  • Conduct ongoing market and competitor analysis, including product tastings, to inform trend adoption and pricing strategy within the Indonesian F&B landscape.
  • Work cross-functionally with Operations, Brand, and Marketing teams to ensure seamless development pipelines and successful menu launches tailored to local audiences.
  • Facilitate executive-level food presentations and internal tasting panels to gain stakeholder alignment on new concepts.
  • Oversee project planning for menu development cycles, ensuring timelines and documentation are consistently maintained.
  • Track and evaluate menu performance through sales analytics and guest feedback to guide ongoing refinement based on local market response.
  • Identify and manage supplier and ingredient sourcing, balancing imported Japanese produce with locally available alternatives, to ensure both product authenticity and cost-effectiveness.
  • Design and deliver structured culinary training program to uphold consistency and quality standards across kitchen teams operating in an Indonesian context.

Key Requirements

  • Advanced proficiency in Japanese cuisine; hands-on experience working in Indonesia is mandatory, with a strong grasp of the local food culture, consumer behavior, and market dynamics.
  • Demonstrated experience in developing fusion menus that successfully merge Japanese culinary authenticity with Indonesian palate preferences, without compromising the integrity of either.
  • Commercially minded with a refined eye for food aesthetics and a sophisticated approach to flavor development suited to the local market.
  • Strong planning, organizational, and interpersonal skills with the ability to communicate effectively across all levels.
  • Analytical capability to develop data-driven menu strategies with a creative flair, informed by Indonesian market insights.
  • Formal culinary training or equivalent professional qualification is preferred; exposure to international culinary environments, particularly within the Asia-Pacific region, is strongly valued.
