Role Overview
We are seeking an experienced and hands-on Head Chef to lead the kitchen operations of a small, quality-driven restaurant in Mauritius. This role is ideal for a chef who enjoys creating fusion cuisine and healthy, wholesome food, while working in a collaborative, non-corporate environment.
The Head Chef will be responsible for menu execution, food quality, kitchen leadership, and maintaining high standards, while keeping operations efficient and well-organized.
Key Responsibilities
- Kitchen & Food Operations
- Lead and manage all daily kitchen operations
- Prepare and execute high-quality fusion and healthy dishes consistently
- Ensure excellent food presentation, taste, and portion control
- Maintain high standards of hygiene, cleanliness, and food safety
- Oversee prep, cooking, and service during operational hours
- Menu Development & Execution
- Work with the owner/management to refine and execute the existing menu
- Contribute ideas for seasonal dishes and menu improvements
Ability to prepare:
- Fusion cuisine
- Healthy, wholesome meals
- Brunch-style and caf-style dishes
- Sushi and mezze platters (strong advantage)
Team Leadership
- Lead and mentor kitchen staff (including future hires in Phase 2)
- Train junior staff on recipes, standards, and kitchen discipline
- Foster good teamwork and a positive kitchen culture
- Cost & Inventory Management
- Manage food costs and minimize waste
- Assist with ordering, stock control, and supplier coordination
- Ensure efficient use of ingredients and kitchen resources
Requirements
Experience & Skills
- Minimum 3 years of professional kitchen experience
- Previous experience as Head Chef or Sous Chef
- Strong background in fusion cuisine and healthy food concepts
- Experience in international kitchens is a strong advantage
- Ability to work hands-on in a small team environment
- Good organizational and leadership skills
Technical Skills
- Solid understanding of kitchen operations and workflow
- Knowledge of food safety and hygiene standards
- Ability to work independently and take ownership of the kitchen
- Sushi and mezze platter experience is a plus
Salary & Benefits
